Recipe of the week - Tuna Salad

Tuna Salad with Mixed Greens, Cucumber, Olives, and Vinaigrette Dressing

Ingredients:

For the Salad:

  • 1 can (5 oz) canned tuna, drained
  • 2 cups mixed salad greens (such as spinach, arugula, and lettuce), washed and dried
  • 1/2 cucumber, thinly sliced
  • 1/4 cup pitted olives (black or green), sliced
  • 1/4 red onion, thinly sliced (optional)
  • 1/4 cup cherry tomatoes, halved (optional)
  • Salt and pepper, to taste

For the Vinaigrette:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper, to taste

Instructions:

1. Prepare the Salad:

  • In a large mixing bowl, combine the drained canned tuna, mixed salad greens, sliced cucumber, olives, red onion (if using), and cherry tomatoes (if using).
  • Toss gently to combine all the ingredients.

2. Make the Vinaigrette:

  • In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, Dijon mustard, honey or maple syrup, salt, and pepper. Taste and adjust the seasoning according to your preference.

3. Assemble the Salad:

  • Drizzle the vinaigrette over the tuna and vegetable mixture. Start with a little dressing, you can always add more according to your taste.
  • Toss the salad gently to evenly coat the ingredients with the vinaigrette.
  • Season with additional salt and pepper if necessary.

4. Serve:

  • Divide the tuna salad among serving plates or bowls.
  • Optionally, you can sprinkle some freshly ground black pepper on top for an extra kick.
  • Serve immediately and enjoy your refreshing and protein-packed tuna salad!
